Healthy Oreo Sandwiches

Healthy oreo cheesecake sandwiches... I still don't really know what to call them but they are out of this world. I actually prefer them to the original stuff… and of course these guys don’t include processed foods, refined sugars, or artificial flavors.
Sweetened with dates, and full of healthy fats, these guilt-free treats are perfect to satisfy a sweet tooth, just be sure to keep them cool.
Ingredients
Crust:
1/2 cup walnuts
1 tbsp macachino eartheats paste or 2 dates and 1 tsp cacao powder
pinch of sea salt
1 tsp coconut oil
1 tbsp dark chocolate chips
water if needed
Filling:
1/2 cup soaked cashews
lemon juice from half lemon
½ cup coconut cream
handful of strawberries (optional)
Instructions
Pulse all crust ingredients in a food processor until well blended. Add some water if the mixture is too dry until it has a sticky texture. Scoop mixture out and form into mini patties. Set aside in the freezer.
Pulse all filling ingredients in a food processor until smooth. Add water if mixture is too thick. Add about 1tbsp of filling onto a pattie, then top off with one another patty to form an oreo. Set aside in freezer. Transfer to fridge 30 minutes before consumption.
