Energy Balls (GF/V)

The best kind of recipes are simple and require minimal work, dontcha think ? And if there is one recipe I make every week it's this! The great thing about these is that you can switch up the recipe to cater to your diet or preferences ! It never has to be boring ! 

I like making fat balls, full of healthy fats and low sugar, and these come EVERYWHERE with me. Going on a trip ? balls. Post workout hanger?  balls. 4pm pick me up snack at work ? balls. Nuff said.

WHAT YOU WILL NEED

Serving: 8-10

  • 1 cup Gluten free oats (I used Bob's Red Mill GF oats)

  • 1/2 cup Raw cashews

  • 1 tbsp Tahini

  • 1/2 cup Raw Sunflower seeds

  • 1 tsp Coconut Oil

  • 2-3 Deglet Noor dates

  • 1/2 cup Shredded coconut

  • 1 tbsp Vanilla extract

WHAT TO DO:

  1. Add the dates and oats to a food processor and blend well.

  2. Next add all the remaining ingredients and blend until evenly pulsed. If the mixture is looking too dry add a little water until it was a sticky consistency.

  3. Roll into balls and place in the fridge (or freezer if storing for long periods)

  4. Enjoy!
